I had made it years ago, according to my records on EPI and my notes indicated that it was too shallow in such a big pan. So this time, listening to myself, I baked it in individual mini-casseroles so that it puffed up over the rims.

I used proscuitto but that was the only change.

WOW. Terrific.

ooops. Now I have to edit to state that I used Monterey Jack with jalopeno cheese.

I'm still thinking about how good this is.

Nah, not too early. smileys/wink.gif But I did ask our turkey guy at the farmers' market, and he looked pained.
