Seven Minute Frosting...

I have never been able to make this kind of frosting, it never hardens up enough, or it is sooo grainy. My father in law wants me to make it for my mother in laws birthday, (Her favorite cake). She died last year and he's planning an elaborate party. Please, any tricks or hints. I am going to try the Betty Crocker Cookbook Recipe.

 
Are you using a candy thermometer? Maybe it is off. I have good luck with the Betty Crocker White

Mountain frosting which is also a fluffy divinity type frosting.

 
I always had good luck with the Betty Crocker recipe, I also was told that it was better to use

cream of tartar than corn syrup. Also, from my experience this cake is better if it is eaten the day it is frosted. My Betty Crocker is from 1956 and the book store price inside is $3.75!

 
Sure makes a beautiful coconut cake. I used to like to make the cocoa mountain one

too and put it on yellow cake. It is not as sweet/sugary to me as buttercream.

As far as the "same day" thing, in my neck of the woods (and yours too) the humidity gets them if we aren't having exceptional weather.

 
I made it with cream of tarter but it's alittle grainy...

I didn't have any fluff, but made the one in the Betty Crocker Cookbook. It is good, but still grainy...should I use super fine or maybe even powdered sugar instead of granulated????
