Another shout out to Shaun for your Ultimate Bran Muffins! Nice and moist,,,

I like that it uses bran instead of a cereal. I had some bran in the freezer, and whipped up a batch this morning. One muffin keeps you feeling full for quite a while smileys/smile.gif

I used the original recipe as I was serving it with boiled potatoes, but

I'm making the less liquidy version this weekend because I plan on serving it with rice. (I love mashing boiled potatoes with sauce. But that doesn't work with rice.)

I'll be interested to hear which version you prefer. For a more elegant dinner, we find

it doesn't need a starch side dish if it follows a pasta course or a soup based on root vegetables. Again, glad you like it.
