Hello everyone!!! Score a visit to the King Arthur Flour pop up shop near me. On a whim of excitement to be there I bought a nordic ware shortbread pan. Any suggestions on a shortbread cookie recipe that would work in said pan OR can I just use any good shortbread recipe? Thank you!!

I've seen those pans in the store in VT and in the catalog but don't have one.
I'd suggest using their chat function on the KA recipe page to ask them. The folks that respond are very knowledgeable.
At the bottom right of this page, click on the "Bread" icon.

Ooh…was it the Nordic one? I had one of theirs and the shortbread did NOT unmold well. Is it the square one with embossed pattern on the bottom? When I used it, the embossed images weren’t very deep and the edges weren’t clean.

I “think” I used the recipe that came with it. Truth told, maybe the pan has to season with a few bakings? I only used it once, was disappointed in outcome, and gave it to my sister.

Marilyn, I bought the pan at KA but it is a nordicware pan. I tried to look for a recipe from them but I was tired from a long day of work (and a really eye opening experience of alternative lifestyles at the home of a cutomer that I had to go to!!! Lovely couple but a lot for this naive old lady, LOL!!! Keeps the days exciting!!) and probably did not do a good job!

I’ve always wanted one of those stoneware versions or maybe it’s ceramic. This same company is the one that my cookie molds are from. Their sugar cookie recipe has become my go to for many years, so I would try one of theirs. Several different recipes here.

Tip: One of the reasons I found out those cookie molds failed me for so many years was I had “air bake” cookie sheets. It was years before I read somebody say that you need to use a regular sheet pan to keep the imprint intact. Well, that made a huge difference and now my cookie mold cookies, nearly 30 years later, come out fine.
