I guess I was so taken with David Leibovitz's Perfect Scoop book, I decided to try what he calls his all time favorite recipe.

Polenta Crisp topping. (for apple crisp)

I followed the instructions to the letter, and for the first time, my company did not clear the baking dish. The polenta grains never softened, so it was like chewing sand. Awful. Don't waste your peaches on this one.
