Shredded Carrot and Serrano Chili Salad

Just made this and it's mighty tasty:

Cook’s Country Shredded Carrot and Serrano Chili Salad

1 lb. carrots

½ cup peanuts

1/3 chopped fresh mint

1/3 cup chopped fresh cilantro

¼ cup thinly sliced scallions

1 – 2 serrano chilies, stemmed and sliced into thin rings

1 Tbsp. fish sauce

1 Tbsp. sugar

1 Tbsp. toasted sesame oil

2 tsp. grated lime zest plus 3 Tbsp. lime juice

1 garlic cloves, minced

Salt to taste (1 tsp in recipe – they call for table salt)

Shred carrots in food processor.

Mix everything together. Let sit 30 minutes prior to serving
