Shrimp in Spicy Garlic Oil

1/4 cup olive oil
1 small onion, chopped
1 small sweet green pepper, chopped
2 or 3 cloves garlic, chopped (I use three)
1/4 tsp. hot pepper flakes
18 large peeled and deveined shrimp

In skillet or wok, heat 1 tbsp. oil over medium-high heat. Cook onion, sweet pepper, garlic and pepper flakes until softened. Add shrimp and stir fry until bright pink and cooked through (3 - 5 minutes). Don't overcook them. Remove from heat and add remaining oil. Let cool to room temperature. Refrigerate overnight. Serve with cocktail pics.
