Sides for a "Summer Fun" dinner please

I'm so fortunate to have the sweetest neighbors ever. Including 3 kids (in 3rd and 5th grades (the latter are twins)). I'm doing to have the family over for a 'summer in dec' dinner because I think they'll find it fun. We are serving grilled hot dogs (brats for the adults) and I'm making a s'mores cheesecake (my kitchen blow torch arrives on Friday!). I'd welcome any "sides" suggestions!

It is hard to find "summer" food in winter, but if you can find some good fruits how about

fruit skewers. Kids love these, you can toss in a marshmallow or two in between the fruits. I have been getting good pineapples, and picked up some large, fat blackberries from Driscoll Farmes on Sunday. They are very good and coming in from Mexico.

tomato cucumber salad. cole slaw. onion dip and chips. jello under the sea salad

I think that was with green jello and part was with cream cheese and on the bottom and then pears on top with the clear green jello. I remember this as being really good.

 
Ang reminded me of a fun jello rec.... Blue jello, in clear cups with swedish fish and for my ds

enjoyment, we add lil worms... It is a giggle. I made them this past summer.

 
Popcorn.... (Seriously)...Even if they are going through braces, they will figure a way to

"suck" on the corn, and enjoy...

 
Lastly, the link won't work, but it was a fun

cake that I made for my dd at the same age.

I am guessing there has to be something on pinterest with this.. But basically, it is 3 foam molds from Michael's craft store. Then I use double tape and add lots of candy. It is a huge hit.

The kids just pull off their favorite candy treat.

Its fun....

 
Deb, I'm a recipe kinda girl...guess what? I don't have a recipe but

I can tell you what I put in it. My grandma showed me how to make it because it was the best on the planet. It's really to taste. You'll know when it tastes perfect to you. Here's what I put in it.
potatoes, boiled whole, cooled and diced in bite size pieces
onion, diced
hard boiled eggs, diced
mayo
sweet pickle relish including some of the juice
salt and pepper
I add mayo until it's creamy and relish to my taste. Then I might add more salt or a little bit of sweet gherkin juice, The juice brings in a nice little touch of vinegar along with the sweetness. I also add a sprinkling of sugar. Sugar often can bring out flavor just as salt will. It's all to taste and texture. Pickle juice will loosen the mixture as well as flavor. Just use small amounts until it tastes great. It also need to stand. I always make it the day before I want to have it and check for flavor and texture the next morning adding whatever it needs.
