SIL brought this Bacon-Wrapped Asparagus and it was oh so good

Christmas was nearly a bust as BIL came down with the flu so we moved everything to MIL's, which meant a delayed start of nearly 5pm vs. the all day deal we normally do.

Bacon-Wrapped Asparagus

My SIL brought these to xmas and they were delicious! Drippy, grab some napkins, but really yummy.

Cook time: 30 Min Prep time: 10 Min Serves: 12

Ingredients

2 lb fresh asparagus, ends trimmed

12 slice bacon, uncooked

1/2 c light brown sugar

1/2 c butter

1 Tbsp soy sauce

1/2 tsp garlic salt

1/4 tsp freshly ground pepper

Directions

1. Preheat oven to 400 degrees.

2. Divide asparagus spears into 12 bundles (3-4 pieces each). Wrap 1 piece of bacon around each bundle, starting 1/2" from bottom of the tips. Secure the bacon-wrapped asparagus with a toothpick. Arrange bundle in a shallow baking pan.

3. Combine brown sugar and remaining ingredients in a medium saucepan; heat mixture to a boil over medium heat, stirring occasionally. Pour mixture over asparagus bundles.

4. Bake 25 to 30 minutes or until spears have begun to wilt and bacon looks fully cooked.

These look fantastic. I'll have to try them with our family. I did Pioneer Woman's...

...cream cheese jalapeno bacon wrapped thingies for an appetizer before Mexican food on Christmas Eve. They were gobbled up quickly.

I made a version last night that were gobbled up. Had cheddar and cajun seasoning added to the

cream cheese. The jalapenos were spicy! I made a test batch for us the day before and soon realized I'd better wear gloves to prep a larger batch. The bacon I used was fairly thick even though it wasn't labeled so and didn't crisp. I'm wondering if the partially cooked microwave bacon would work better. However, the person I especially made them for was a happy camper as he prefers his bacon not so crisp. I did save the bacon fat (cooked peppers on a rack) and am looking forward to using it in some refried beans.

 
Pioneer Woman's recipe says to cook at 375 for twenty minutes, and no longer.

That's so the bacon doesn't cook so long that it shrinks and constricts the jalapenos. She adds that if the bacon isn't crisp enough, just turn on the broiler for a couple of minutes. I did that with both batches and it worked great!
