Simple Bulgur Salad - won't change the world - but it was good.

my resolution is to cook with what's in the house - hence this is a bit of a clean out the fridge salad.

1 cup bulgur

2 cups water

2 celery stalks chopped

½ cup toasted pinenuts

chopped apricots

additional options that could be added:

¼ cup dried cranberries

1 chopped avocado (optional)

¼ cup crumbled goat cheese (optional)

2 cups torn kale

For the vinaigrette: - nice taste but didn't use it all

Juice of 1 orange

3 Tablespoons balsamic vinegar

2 Tablespoons olive oil

1 teaspoon honey

1 teaspoon minced ginger

½ teaspoon salt

¼ cup chopped fresh parsley
