...with my weight. I've always loved to cook and to eat, and I put on weight easily. I'm winning the battle at present, but sometimes I just have to splurge:

Fresh peeled and diced russet potatoes fried in chicken fat and a little butter to a crispy-edged golden brown, with a little salt and pepper.

Oy.

I've been doing them occasionally in the fresh rendered pork lard from the carniceria

They are supremely crisp and delicious. Makes you understand the difference in McDonald's fries since they cut the animal fat.

 
My latest simple food craving has been that Bar Cheez. I eat it stuffed in celery these days.

(did anyone else grow up with cheez whiz stuffed celery?) The cheese is simply Merkt's sharp cheddar spread with 4 oz cream cheese and about 2T horseradish. Mix it all up and let it sit for a few days in the fridge. Such a simple spread, but I have found it addictive these days. I'm bringing snacks to a meeting this Thurs. and guess what I have sitting in the fridge to take. yep, bar cheez. I'll make some Union Square Bar nuts and for sweets, some Krispy treats.(Bar cheez, Bar nuts---and it's for a church function---LOL)

I remember reading that not only did they use pork lard, but they put a small amount...

...of beef drippings in the fryer too.

I remember working at the fast-food place where I met my wife so many years ago. They served the thick-cut steak fries.

We used to change the fryer oil every Thursday afternoon. I'd work Thursday night and just PIG on hot fries! Of course I was 17 then and never gained an ounce.

I also opened the place on Sunday mornings. One of the first things we prepped for the day was frying up a ton of bacon on the grill. Meat candy again. That was so good.

how about tossing those fries in some well beaten egg white and baking them?

Put a little olive oil on the sheet and turn them partway. Salt after baking.
