...some tilapia loins (thick trimmed tilapia) from Costco using some tips from Cook's Illustrated.

They dried the filets (patted dry with paper towel), salt and peppered both sides and let the filets sit until they 'glistened with moisture'. Then I rolled them in panko and pan fried in a ton of sweet butter.

We ate a whole bag between the three of us (eldest son won't touch fish with a ten foot (fishing) pole). Very, very good.

I just bought some tiny tiapia filets from TJs...

...they looked like sand dab size... and this is exactly what I'll do with them tonight...of course faster since they are little! I was going to mix crumbs with a little flour 'cause I'd forgotten about panko! Thanks! I can hardly wait.

As I get older I really like classic, simple prep of excellent product better than food that is tortured into something it shouldn't have been in the first place.

 
Have been making them recently by dipping in flour, then egg,

then flour and then panko. Sautee. Really really good.
I think tilapia would also be good fixed with the Spanish tomato sauce that snapper is often served with--can't call the name.

...in the first place". We've all witnessed that!

I went simple... no egg wash, flour, extra seasoning beyond S & P. The coating was minimal, the fish was tall, proud, and pristine.

And tasting delicately of butter.

Oooh lah lah!
