Simple Menu from Mom's memorial

For mom's service I made:

1. Fruit Tray (fresh goodies from Farmer's Mkt)

2. Veggie Platter w/ good ol' ranch dip and assorted cheese cubes

3. Spinach Dip in sourdough bowl (sourdough boule not that easy to find in LA)

4. Deviled Eggs (sister made)

5. Guacamole and Chips (nephew's GF finished making -- too much lime juice, boo)

6. Veggie Enchilada Casserole (made sister make after rejecting my idea of using black beans in it)

7. Green Chile Chicken Enchilada Casserole

8. Southwest Quinoa Salad (posted by Nan; Torn from a '97 Sunset.)

9. Green Salad w/apple, avo and whatever I found to toss in.

10. Chocolate Chip Cookies (Alton Brown's Thick and Chewy)

11. Pie (from Polly's - Banana/Strawberry - making mom's choco pie was vetoed smileys/frown.gif

12. Cakes brought from Martino’s Bakery in Burbank -- omg, they were TDF especially the chocolate with raspberry mousse filing.

 
That sounds delicious, M! ? 4 U: Why ever in the world would yr mom's choc pie have been vetoed? To

me that seems like it would have been a nice tribute to her.

 
LOL! She was worried about the meringue shrinking (even though she wouldn't be making it)

When a friend said she was sending 2 cakes I let go of the idea because there would be too much dessert. As it turned out UPS screwed up delivery, so she brought two cakes. And UPS sent the cakes the next day even though she'd cancelled the order. So we had 4 cakes!

 
Somehow too much dessert is always okay, it gets eaten for breakfast, LOL

Well, I didn't think I'd be doing everything so only got 30 mins of sleep the night before

and then had a lack of sleep meltdown the morning of, that resulted in the grown kids pitching in to finish the food. However, the service/reception turned out lovely.

 
Yes, vegetarian, vegan & gluten free choices. One guest we didn't know was vegetarian was thrilled

to be able to eat as she didn't expect she'd be able to. As a hostess, that kind of thing always makes you happy.
