anyone know of a good one, the "standard" that almost everyone refers to, has lots of info on all types of preserving fruits and vegetables? I know I originally found it when doing a google for "u-pick" and it was extremely useful for all types of canning.

great site! they were right on with the salmon canning link. my DH is doing that today with some

smoked salmon. jars and cans. I had never used cans before last year. you have to have the contraption for putting the lids on, but we find that putting up some salmon in cans is good for sending in the mail, rather than the jars which we keep for ouselves.

 
As a gift, someone just gave me some canned smoked tuna. I've never even seen it before. Do

you can that as well? And then, do you have a favourite way of using it?

no tuna caught up here, just salmon and halibut. we don't often go out for halibut though.

just can salmon----raw and smoked.
