Since Rick brought up the topic of liverwurst, I have to give you all a head's up on my favorite.

Boar's Head makes a Smoked Liverwurst that I find simply maaahvelous!

When I allow myself such caloric indulgence, I use it as a spread on water crackers, or in a bialy with a good sliced pastrami or corned beef.

Think of it as a flavoring and spread it on one half of the bialy (or any other favorite bread) like you would use butter. It is so flippin' good!

My Mom used to eat wonderful open face sandwiches with a thick layer of braunschweiger and thinly sliced red onion on a slice of good german brown bread. Wow. I still eat those, occasionally.

The bread and the braunschweiger came from the German deli in San Diego and the owner used to buy the bread from a local German baker and make his own braunschweiger. His smoked fish was amazing as well.

I shouldn't write these posts when I haven't eaten yet...

I've always been so curious about bialys-I've never even seen one here

I think I'll have to make them myself to try them.

Your talking about liverwurst reminded me of one of my grandmother's great salvage depot finds-one year she found a huge (about 4 pounds maybe) triangular tin of truffled pate de foie gras. We used it at a big party at their house and I almost made myself sick eating so much of it. It was heavenly and almost solid fat-it was the palest beige pink. I can't remember the brand but I could find it for a while in small tins. It was hands-down the best pate I've ever tasted.

 
I used to buy liverwurst sandwiches down the street from our shop on Balboa Island.

It was Boar's Head--not sure if it was smoked or not. It was very firm, and it was divine.

I would probably like it with anchovies too.

 
MMMMMMMMMMM Smoked Leberwurst...

Michael it is the food of the gods. I am so lucky that I have a local century old butcher shop that smokes all their handmade sausages and they also smoke the Leberwurst. Nothing like it on a nice slab of caraway rye with Düsseldorf mustard and dill pickles. The scent of this Leberwurst is intoxicating, it's almost like a perfume.

 
It's Avril-Bleh and Sons Meat Market on Court Street opposite

the Kroger Headquarters. They've there been for 100 plus years.

And so conveniently located next door is Servatti's pastries where you can get their great giant Bavarian soft pretzels to go with your sausages.

Don't forget to buy the sauerkraut at Avril's. They make their own and it is amazing.

Also, their housemade garlic minced ham loaf is amazing.
