Hi,

I'm serving lunch on Friday to some folks that are dieting the low calorie way -- I've never done that so have no idea what might be considered a lower calorie meal #wise. (They saw me eating a low carb meal and freaked out with all the meat/cheese/sauces and such.)

I was hoping to find a best of or hall of fame type section on Cooking Light but it doesn't appear they have that. Also, I want to make something really tasty (of course) so I didn't want to make something untested/reviewed.

Suggestions welcome!

Look in Tried and True under "Soups and Stews" at item #79.....

super easy, can be made 2 days ahead, ALWAYS gets rave reviews and is fabulous. Healthy, low-cal,
serve with a beautiful light salad and some fat-free sour dough.

Pasta With Garlic Oil and Toasted Breadcrumbs, Chicken Souvlaki Salad, Black Bean Patties With Cilantro and Lime, Vegetable Couscous Paella, Vegetarian Tortilla Soup....

Thanks for all the great ideas!!! I ended up grilling shrimp kabobs

as they were quick, easy, and I hadn't prepped much. smileys/smile.gif
