..... oh, yeah baby!

Soft boiled eggs, perfectly peeled, in six quick minutes in the steamer basket!

next time I'll try 5 minutes and 30 seconds just for the fun of it









 
I put the water to boil....

.... wait until it boils, THEN add the steamer with the eggs on top, so the timing is precise. My pan has the steamer part as a double boiler type with handles, so it's easy to add it to the lower part without risking burning hands smileys/wink.gif

 
Dropped in ice water right after the 6 minutes

waited maybe a couple of minutes and peeled them

I have quite a bit of resistance to heat in my hands, but I think anyone will be able to do it.. They are a little more delicate (obviously) than hard-boiled, so I did not run cold water over them

I have never peeled soft boiled eggs. Those would be lovely

on a salad--the French one, yanno!! ;o)
I think I like mine a tad less cooked, as you may suggest by lowering the time. Interesting about cooling them to peel.

 
I just did a pair of Hard Boiled by steamin and the came out great-- . . .

They practically fell out of the shells. Cooked for about 12 minutes and dropped into ice water to cool for immediate use. Will be using this method for deviled eggs for the holidays!

I have two and a half dozen eggs at the moment. My friend's hens have been very productive.

 
I've done 36 eggs by steaming in the last 4 days (don't ask why) and every one ...

...was perfect.

They peeled like a dream!

The whites were cooked, but tender.

The yolks were bright yellow, with no purple ring.

11 minutes were slightly soft, but still solid.

12 minutes were perfect for my purpose.

No, no, no...are you kidding me? Now I want to know more than

ever....what ARE you doing with 36 hard boiled eggs? ;o)
