We got 4 lbs of Copper River at Costco last weekend

in Fairbanks some years ago.
Caught and smoked by a friend of hers, it was not that really moist stuff you see in the stores. It was very smoky, quite firm, quite fatty and flaked well. It was just as good as pork bacon, and it reminded me of salmon bacon. We had to fight our kids off to eat some because they were stealing it just as fast as it could be flaked. . .!
