So I bought this 6 pound duck. Now what?

I have never made a whole duck before (did chicken and turkey, though). Can I roast it in the oven like "normal" birds or is there a better way?

One thing I recommend is to serve the sauce on the side and not on the duck.

I really like crispy skin and the sauce will make the skin soggy.

 
Don't forget SusaninKentfield's amazing duck quesadillas with brie and chipotle blackberry sauce for

leftovers! It's exceptionally good with any shredded bits from the ribs and any leftovers.

I also save the bones for amazing broth, I add it to my chicken carcasses in the crock pot.

 
Duck is in the oven. I couldn't find cherries anywhere this week - the store

was even out of canned ones so I'm running with Richard's Day-Before Duck this time. I don't have a day for it to rest, but I hope some 10 hours will do. I'll let you know smileys/smile.gif

I served the duck with orange sauce, rosemary potatoes and broccoli on the side. It was just perfect smileys/smile.gif
