I had wanted to make Gramercy Tavern Gingerbread, but I also had a printout of Traca's Chocolate Stout Cake recipe. Now I've got one big bottle of boozy beer and I'm not sure what to make...especially considering the fact that I don't like beer.

Actually, the label on the bottle says "Double Chocolate Stout." Apparently my subconscious tried desperately to protect me from that yeasty, bitter beer taste.

I've made the Gramercy recipe,and honestly, I think you can use your stout for either. once you add

the sugar and spices and cocoa, I don't think you could taste the difference in the stouts, but then, I'm no beer lover or expert. It should just lend a nice yeasty taste to the cake, and it sounds like your stout would be terrific.

 
aw RATS, that's exactly what I've got (from Whole Foods). Well, I don't

like beer anyway, so tasting gross is relative.

The question is, will it ruin the cake, cause I'll waste a bottle of beer, but I'd hate to waste a cake's worth of ingredients.

I was also talked into Porter, which the man claimed was just like a chocolately stout.

A warning/tip about the Gramercy Tavern recipe...

If you follow it exactly, you will have a VERY greasy, heavy cake.

I make this frequently, but after the first try, I reduced the oil to half a cup, or slightly less, and the cake is much better.

Here's the warning- less oil = a cake that rises much more! Be sure to use a larger pan.

Either oatmeal, chocolate or regular stout will work, or you could use another hearty dark ale, like Harpoon Munich Dark.

Is that what those are called? I've seen them on cooking shows, but never knew the name. Thanks. I

calculated the volumn (~300 cubic inches) for a 3 layer 8"x2" pan. Then I ran through the equation with several of the pans I have, seeing how many I would need based on the size.
