We'll also have halibut tacos, sangria and mango margaritas. Some rice, haven't decided yet, and black bean salad for dunking chips in, as well as guacamole. Maybe some brownies with a touch of cinnamon. Ole'!!
However, I'd go with the machaca, since I think you need something with a tomato flavor to it.

That's a difficult decision. I'd taste test the sangria and/or the mango margaritas while deciding.
I'd go for the pork, because to me machaca is at its best at breakfast, scrambled with eggs. Some might scoff, but that's how I have always enjoyed it.
When I make this, we have it over rice the first day, and the with the leftovers, I make a chili out of it by adding beans to it. All three are excellent, but this one is one off my all-time favorites.
