So, there's a New Mexican Christmas cookie called a biscochito.

Anyone familiar with it? It's anise-flavored, dipped in cinnamon sugar, and is traditionally made with lard. I make a batch every year at Christmas; they're so good.

I have a friend at my church who also lived in New Mexico for years; we bond over turquoise jewelry (we both have the same turquoise watch band) and green chile recipes.

Anyway, she just made a batch of biscochitos and brought me over a bag of them. What a sweetie.

Also, what kind of lard do you use? Your own? The packaged stuff from the store?

We have close friends who grew up in Albuquerque and they make them every Christmas.

Traditional in New Mexico, and quite delicious!
