I'm not doing a whole lot today! Big plans are a cookout tomorrow with friends, if the weather holds out. If it doesn't, will go to Heid's (see link) and enjoy hot dogs inside. Probably a walk at the lake in either case.

I saw an interesting-looking cold peanut and noodle salad recipe so I may take that.

Made lemon-tarragon fish for dinner Friday, over rice with tomato-zucchini sauce, and blueberry sorbet. Also although while it was going to be salsa, I also made grilled tomatoes, zucchini, garlic, basil, and onion, all sliced and simmered together in olive oil and vinegar for a little while. "Everything-from the garden" sauce" - heheh.

Taking sister and BIL to airport later today. Sigh, always a bridesmaid, never a bride.

Cleaning out car.

'Bought too much bread at local Freihoffer outlet's 79-cent sale. What do you do with a bag of mini-croissants except freeze them?! Just a dumb question, wouldn't you consider both donuts and bread "baked goods" or are they different? (As in "Everything in the store is on sale except for the baked goods"!) I suppose she meant dessert items.

Amount Measure Ingredient -- Preparation Method

4 plain croissants
1 tablespoon butter
2 cups sliced fresh mushrooms
1/4 cup sliced green onions
4 eggs
1 cup milk
1 cup shredded swiss cheese
1 cup shredded mozzarella cheese
1/4 cup parmesan cheese

Split croissants in half and place bottoms cut side up in one layer in a rectangular casserole. Melt butter in a fry pan. Saute mushrooms and green onion until tender and liquid has evaporated. Set aside. Beat together eggs and milk. Pour half over croissants, layer mushroom mixture and cheeses
on top, then pour over remaining liquid. Position croissant tops over the bottoms, cut side down. Let stand over night in the refrigerator. Bake at 350*F for 25 to 30 minutes or until set. Cover with foil if browns too quickly.
Dnote: this is a very forgiving recipe. You may add what you like to it, and leave out what you don't like. The tops of the croissants become golden brown and very flaky. I think this would be good with some diced ham, Canadian bacon, bacon, cooked shrimp or crabmeat. You get the drift. Play with this recipe to your liking both with the ingredients, and the cheeses. You can easily double this recipe or halve it. Serve with sausage, bacon, or ham, and a nice fruit salad.

We are playing poker over at my step-daughter's house.

They are grilling steaks. I am bringing the brownies I posted down below. Tomorrow I am working. It should be busy, so I am going in.

I'm watching the regatta in the harbour, from my balcony. Trying to plant pots for the winter but

it's so hot. I clocked 123 out there in the sun and 92 in the shade. I don't have a lot of shade. What the heck, I don't have a lot of balcony.

So I was reading this because I needed to cool off, since you're asking.

Aside from that, comfort-eating a lot of terribly uncreative food. I did, however, cook a pork tenderloin before packing every last pan in our kitchen, so we ate that, last night, and then had the leftovers again tonight. We're also in eat-the-fridge mode, so it looks like we'll be eating a lot of celery and yogurt tomorrow. And I still need to buy brownies, fruit, and drinks for our movers. (Last time, I baked brownies; this time, no can do.)

Breakfast is whatever looks good as one of us is dashing around with M. during her morning walk... And from there on out, I'm afraid it's takeout. But if we can get the contents of our freezer safely moved, we'll have red-lentil curry on Wednesday night in our new digs. smileys/smile.gif

Happy weekend...and someone please have a cookout hot dog or burger for me. Next year, I hope we'll be at the beach over Labor Day!

LA is hot and muggy right now and we can't wait to be up in Santa Barbara and Big Sur to cool off.

 
Yes! It is such a good recipe when you have house guests.

Great minds think alike...

Sept-October are my preferred vacation months. Still great travel weather, most of the big summer crowds are back to work and back to school, and the holiday travel rush hasn't started yet.

We're heading out on a cross-country rail adventure next week. We'll take the Cardinal to Chicago, the Empire Builder to Seattle, Coast Starlight to San Francisco, California Zephyr to Chicago and the Cardinal home to Cincinnati.

I cannot wait to get away and have all that glorious down time travelling on the train just watching the country go by, reading, sleeping (we have reserved bedrooms for the entire trip), eating (3 meals/day in the dining car included with the bedroom), with no hassles, no stress, etc. With the parlor car, dining car, bar car, cinema car, glass-domed observation car, private bedroom compartment, wine and cheese tastings in the late afternoon, etc. sounds like there will be ample opportunity to vary the time and keep from getting bored.

If anyone has any tips for long-distance on Amtrak, I'd love to hear them (things to pack, things not to bring, etc.). I included a link to the menus on the train. Anyone have experience with the Amtrak dining experience on the long distance trains? Do I need to pack food? LOL
