Soba Noodle Soup with Chicken

INGREDIENTS

400g soba noodles

200g chicken thigh

1 spring onion

1500ml dashi (Japanese soup stock)

60ml soy sauce

60ml mirin (Japanese sweetening, can be substituted with sugar)

DIRECTIONS

Cut the chicken into bite size pieces.

Boil the mirin in a pan to remove the alcohol, add the soup stock and bring to the boil. Add the soy sauce and bring to the boil again.

Add the chicken and cook until tender, skimming off any scum that forms during cooking.

Cook soba noodles and place in a deep bowl. Pour the soup and chicken on top. Garnish with chopped spring onion.
