Some eggplant recipes... I did a search, and found a bunch of them

Just thought I'd post them if anyone has a jar of roasted eggplants, like I do!

The Mediterranean eggplant pie looks especially good to me (minus the caviar).

No... found them in a way off-the-beaten-trail market during the weekend drive

Only $1.50 for about 500ml - nice jar, too. They are pickled, I think, or at least contain vinegar, garlic, and other spices. I couldn't pass up a deal like that. I should've bought more than just one.
