as of this writing there are 63 users registered, not including me, my programmer etc. That's 63 of you guys!

So far I am by far the most talkative with 82 posts. The second most talkative has 20. I promise not to take over the forum forever, I'll just be normal once we get the initial kinks worked out!

Peggy-AZ's Mozzarella-Stuffed Cherry Tomatoes

I served 3 of these on each plate, alongside a confit crostini, for a starter. I used burrata, a buffalo mozzarella mixed with cow's milk cream to make it richer and buttery. With different-colored cherry tomatoes, it was quite beautiful on the plate, and tasted like summer.

Zucchini-blossom frittata

Visually stunning, with the bright orange petals and the golden (broiled) top of the frittata. I sautéed some chopped shallot first, then added the blossoms for about 30 seconds. Minced chives in the egg mixture took it up a notch.

 
Peperoni Ripieni con Tonno (Cherry Peppers Stuffed with Tuna)

Everybody loved these -- "phenomenal" was the word -- and they disappeared. (The marinated eggplant tied for favorite dish.) Out of 10 people, only I was bothered by the heat.

I confess I used bottled hot cherry peppers, but don't think you could really tell the difference, since they get simmered anyway. I found a 10-minute simmer was enough. I also seeded the peppers before simmering them, to further tame the spiciness.

This recipe made plenty of filling for two large jars of peppers (about 25 altogether), but leftovers make great sandwiches.
