some handy baking substitutions...

from cooks illustrated dec'07:

1 cup cake flour = 7/8 cups all purpose flour plus 2 tbsp cornstarch

1 ounce unsweetened chocolate = 1&1/2 ounces bittersweet or semisweet chocolate minus 1 tbsp sugar from recipe

1 ounce bittersweet or semisweet chocolate = 1&2/3 ounces unsweetened chocolate plus 2 tsp sugar

1 cup light brown sugar = 1 cup granulated sugar plus 1 tbsp molasses

1 cup dark brown sugar = 1 cup granulated sugar plus 2 tbsp molasses

1 teaspoon baking powder = 1/4 tsp baking soda plus 1/2 tsp cream of tartar

1 cup whole milk = 5/8 cup skim milk pluls 3/8 cup half and half
