Some spectacularly decorated cakes - the talent is Amazing!!

I have never made any cakes like that but have wondered when one

puts all the time and effort to make such beautiful and perfect cake, is it hard to do the first cut into them? Do folks always appreciate it when one does such a masterpiece for them?

 
From my experience, no, people do not appreciate the time it takes

Living in a family with neurotic cake decorators (the last birthday cake took 3 people 1 week to make) I've seen the reactions. There are the assorted oohs and ahhs when the cake comes out, but most don't appreciate the work, creativity, time, and engineering, that go into making these architectural carb masterpieces.

And while I appreciate all the work since I see it, for me, after it is presented, just give me a slice of coconut layer cake filled with lemon curd and frosted with seven minute icing, or a slice of carrot cake with cream cheese icing, etc.

I hate all that fondant that goes into the build.

 
I'm no fan of fondant as well and won't use it...

The cakes I'm making this weekend are going to be all buttercream. Fondant cakes look more like a craft project than something to eat to me. I use fondant only if I want to create an accent, like a butterfly or something, because to me taste comes before look.

 
I totally get the not using fondant. It's more of the artistry that amazes me

I'm not a fan of fondant either. It's just that no matter what medium used, I could never create a cake like this.

Thanks goodness that my plainly decorated cakes taste good - LOL!

 
They're based out of West Palm Beach. Very affluent area. I fly in there when I visit

my parents and the last trip, we took a drive through some beach front neighborhoods. We have affluent people in my area, but I've never seen anything like this before. Mega houses with actual "service entrance" marked on the road. I bet she's got some crazy client stories!
