Some spreads for those lucky enough to have good corn-on-the-cob (from Southern Living mag) Not T&T

Saw these interesting spreads yesterday while waiting at the dentist's office (in my opinion, the 21st century's version of the Spanish Inquisition torture chamber).

Spicy Wasabi Spread

1/3 C sour cream

1/3 C mayo

1 Tbl prepared wasabi

1/2 tsp grated lemon rind

1/4 tsp dried ground ginger

1/4 C toasted sesame seeds

Whisk first 5 ingredients together. Brush on hot corn and sprinkle on seeds.

Smoky Chipotle-Lime Butter

1/2 C butter, very soft

1 1/2 TBL chipotle hot sauce

2 tsp fresh lime juice

2/3 C crushed tortilla chips

Mix first three ingredients together, brush on hot corn, and top with crushed chips.

Roasted Garlic-Red Pepper Butter

1/2 C butter, very soft

1 garlic bulb

1/2 tsp olive oil

2 TBL finely chopped jarred roasted red bell pepper

1 Tbl chopped fresh basil

2/3 C grated parmesan cheese

Cut off tips of garlic bulb, drizzle with oil, wrap in foil and bake at 400 degrees for one hour.

Cool. Squeeze pulp and add ONLY 1 1/2 tsp to butter (save the rest for another recipe).

Add the basil and peppers, brush on hot grilled corn and top with cheese.

we are too far removed from having the local blacksmith give you a bottle of whiskey and come at you with pliers!
