pancake or waffle batter to make muffins. So this morning we had a waffle and topped with the rest of the Vanilla Rhubarb that I made to go on the Dutch Baby. Delicious by the way. So we only have one waffle each so I always have left over batter and that's a problem. It changes color and consistency when I keep it to use the next day. And we just never like them warmed up in the oven so it always gets thrown out. So this morning I used it to make mini muffins. I put a teeny pat of butter in the bottom, brown sugar and chopped pecans and then the batter. They are so good and now we have 9 little mini waffle muffins for breakfasts. Yum
