Somehow this seems the place to share - my uncle's wife just passed away

and you all are sort of a secondary family that I am so thankful for. It just seemed like the place to come sharewith all of you. I just didn't think that the Wegener's Granulomatosis was going to get her this time. She was doing so much better after three weeks here in Nashville and I had a gut feeling sending her back to Mississippi wasn't the right thing to do. Within 48 hours of going back to hospitals there, she was in critical condition and within 5 days they were saying she wasn't going to make it. She hung in there almost three more weeks improving a little each day and only took a sudden turn for the worse last night and again this morning. I guess I am in shock because I saw her leave here on the mend. She was only in her 50's with so much still to live for - oldest son married with two kids including a new baby, middle son a BRIGHT medical student that got engaged when she was in the hospital here, and 18 year old daughter that also just got engaged.

But she loved cooking. Wen my uncle started dating her and she brought all these wonderful 'new' foods to family gatherings, I knew I wanted her as part of the family. They weren't fancy foods, they were simple but they were different and good. She loved it when they came to Nashville to see her specialist because I would always fix something 'different'. I'll never forget her calling after she got home one time because she just had to have Gretche's SIL Sausage Corn Chowder recipe. Or that I had to get up and bake a Souther Apple Pecan cake for her to take to the doctor - we found that taking a cake to the doctor and his staff worked REALLY well at getting them to remember you and help take care of you. In fact when I called their office to tell them she had passed, the receptionist immediately knew who she was and remembered her as being so sweet and bringing them cakes.

I fixed her Pappa e pomodoro soup two nights before she went back to Mississippi and when my uncle called me to tell me they had messed up the arrangements to transfer again and they were staying another night, he said she wanted to know if I could bring her more of that soup and some of the pepper jack pimento cheese croutons so I fixed up some and headed to the hospital one last time. I just never thought it would be the last time to see her or I wouldn't have hurried so much and messed up those croutons.

But there are also some things to take away from this - don't under estimate what food means to folks. But also, be an advocate for your health. If you get something, research it and take control of it. It's the one thing I tried to show them how to use the internet and connect but they didn't. I don't know that it would make a difference in the long run but I just wish they had paid more attention and taken more control.

 
Carol's Chicken Spaghetti

Not a fancy dish but it's one of the first things she made when I was a teen and I went WOW! That and her mother's roll recipe. I think the first time she made this it was for our family when another family member passed away.

CAROL'S CHICKEN SPAGHETTI
When Uncle Sonny started dating Carol, we knew she was a keeper. The foods that she made were always incredible. This is probably the dish of hers that I loved the most. I use what I have on hand so this is the base recipe but then in the tips I'll list some other possibilities because they are endless. Kristen loves this too which is saying a lot. It's easy to fix and it freezers pretty good just add a little more broth when freezing.
1 pound ground beef
4 pound hen
1 pound spaghetti
2 bell peppers, chopped
1 cup celery, chopped
1 cup onion, chopped
margarine
2 2 pound cans of tomatoes
1 pint green olives stuffed with pimento
1 large can mushrooms
salt & pepper to taste
garlic salt to taste
1 cup grated cheddar cheese (or hoop cheese)

Procedure
1 Simmer chicken until tender. Cut meat from bones into small pieces. Slowly cook spaghetti in chicken broth.
2 Brown beef in margarine. Drain. Brown celery, mushrooms, peppers, olives and onions until white and tender.
3 Mix everything but the cheese together. Taste and adjust seasonings. Place in large casserole pan.
4 Bake at 350 for 30-45 minutes. Before serving, sprinkle with cheese and brown.
Servings: 12

Recipe Tips
I've used leftover chicken, leftover turkey, whatever is on hand.
Besides ground beef, you can always brown some sweet or hot Italian sausage.
You can make this a little creamier by using a can of cream of chicken or cream of mushroom soup.
I have added in all sorts of things - chopped marinated artichoke hearts, black olives, capers. They just make it better.
I stir in a little Parmesan'Romano cheese blend and then sprinkle a little on top with the cheddar.
For a little spice/heat, I add a pinch of red pepper flakes - to your taste.
Even if you aren't crazy about olives, don't omit them - try it with them because they really add something to this dish.

Missy, I'm so sorry. To go so young with so much ahead of her is a tragedy. You were fortunate to

have known her from her very first entrance to your family, and they are so lucky to have you in their lives!

Thanks for your observations on the importance of food in the lives of all of us -- it draws us together (look at FK, for instance) and tags events with special memories.

For cryin' out loud -- "messed up the croutons"???! Get out! smileys/smile.gif

 
Bread has always been my challenge - I can make a souffle but toast???

I forgot them and over toasted them before topping with pepperjack pimento cheese and baking again. They were hard as a ROCK and slightly 'burned' and she sat there and ate them anyway. She wanted them so badly and had asked for the recipe.

Back in October when she came because she was having trouble breathing, I made these. She said not to go to any trouble (it was 4am after we had just spent 6 hours in the ER) because she hadn't eaten more than one to two bites of anything for weeks. Well, she got her appetite back when I pulled out leftover pappa e pomodoro soup and made some of these. Her daughter couldn't believe it - she ate a whole bowl of soup and several of these croutons.

Hoop cheese - it's yellow cheese with a red wax

and occassionally black wax. It comes in BIG wheels. I wish I could say for sure what it is but I've had it taste like Colby and I've had it like sharp cheddar. So I always use cheddar or Colby in recipes.

Losing family is so hard. Been there, done that and it doesn't get any easier but the good memories are oh, so wonderful! Isn't it awesome that God gave us the capability to remember?
