Someone gave me a super simple dressing recipe that I'd like to take on a picnic tomorrow.

Just wondering if I can mix and dress ahead of time or if I should take all the ingredients and mix before serving.

The dressing contains:

Creamy p'nut butter

Lime juice

Soy sauce

Chile flakes

Served over cold spaghetti mixed with scallions, chopped p'nuts and diced cucs.

I have made something simiar. I would suggest making the dressing and puttting it in a seperate

container. The pasta may absorb all of the dressing and may be dry. Alternatively, you could double the dressing, make, dress and have extra in a container, if needed. I have added seseame seeds as part of the garnish. Very light, refreshing pasta dish! Enjoy your picnic!

Barb

Per serving:

1Tbsp p'nut butter
1Tbsp soy sauce
1Tsp lime juice
Pinch of chile flakes

Toss with 1 cup cold cooked spaghetti and a quarter of a diced, seeded cucumber. Top with chopped p'nuts and sliced scallions.

324 cal per servings

I made a bit to test it out and it's really good. I might put a bit of zest in tomorrow too.

this would be great with some Kaffir lime leaves julienned & tossed in!

Sorry the leaves won't be there in time :>(
