Durade, butternut squash, tamarind

Carrot-coconut "sunny side up" foie gras with candied olives, green peas and beet juice

Crab roll with pickled ginger, fried mayo cubes and tomato molasses

Miso soup with "make your own" sesame noodles

Smoked eel with peanuts, snow peas and whipped caramel

Spring lamb with carob honeydew and fava beans

Eggplant tuille filled with sweetened eggplant mousse

Menthol mousse with lemon balm and chartreuse sauce

Soft chocolate with avacado

Lime corn caramels with edible wrappers

I probably skipped something (I have "licorice" written down) but this is what I can make out of my notes. Plates were "dusted" with flavors. I have pics but can't figure out how to post them. Sorry.

And I STILL don't know what shots of "ocean mist" are!

Hi Lisa! It was a long thin "cigarette" of soft chocolate with small drops of

sweetened avacado mousse and a bigger dollop of lime mousse.
Tried to send you a pic of the plate but it won't copy to a p.m.

Cyn, up in T&T hints is a link and instructions to post pics using photobucket. If I can do it,

anyone can LOL.

Looks like an eel to me. LOL. the experience must have been unique.

Not so sure I would appreciate such an unusual menu. thanks for sharing.

Well, it was unique but I think it was also well thought out. Very complementary flavor

combos. Sweet and lush beet juice with the foie gras and super salty smoked eel balanced by caramel and lime. I think once is enough though!

Cyn, thanks for the picture. I will say I think the texture of the avocado and soft chocolate

would marry well together, I just can't wrap my mind around them together.

I've have had avocado in sweet dishes, too, and I know it is good that way. My favorite way to have it is smooshed with garlic salt on toast. smileys/smile.gif
