Sounds good: Rice Pilaf with Dried Cherries and Toasted Pistachios

Here is one of my favorites. REC: Wild Rice and Cranberry Salad

Wild Rice and Cranberry Salad

(I couldn't find it at Epicurious so I am typing it in....)

12 Servings

6 1/2 C water
1/2 C chicken broth
2 1/2 C wild rice


1 C dried cranberries
1 C golden raisins
1 C chopped green onions
3/4 C toasted pine nuts
1/2 C mixed sprouted beans (I omit)
1/2 C chopped parsley
2 T grated orange peel
1/2 C fresh OJ
1/4 C cider vinegar
1/2 C olive oil

Bring water and broth to boil in large saucepan. Add rice and bring to boil. Reduce heat to medium and simmer until tender but still slightly firm to bite, stirring occasionally, about 40 minutes. Drain rice; transfer to large bowl and cool.

Mix cranberries, raisins, green onions, pine nuts, sprouted beans, parsley, and orange zest into rice. Whisk OJ and vinegar in a small bowl. Gradually whisk in oil. Add enough dressing to salad to coat. Season with salt and pepper.
