I make these all the time. Not much time and effort to put together the dough.
Overnight in the fridge.

Things I learned making these...
* Sprinkle a little of the topping on the parchment lined baking sheet so there's that flavor on the bottom too
* When boiling start with the bagel top side down in the water. The flip (using a chop stick) to right side up. This way when removing with spider or spoon it doesn't mess the top of the bagel up.
* Don't dip bagels into the toppings - this messes up the bagel and wets your toppings on the dish making them harder to use. Simply place bagel from water onto the parchment lined baking sheet. And immediately sprinkle with your topping. You control how even and how much topping much better this way. BUt you have to do immediately since it's the wet/water that makes the topping adhere,
* I tend to boil one bagel at a time. Doesn't take long since the recipe only makes 8-10. From boil to sprinkle takes about 1 min each. Besides - the oven is still heating up.
