I made a version of these yesterday for the first time after seeing the picture on chowhound. Served it with rice and salad for dinner. I really enjoyed the eggs. This picture is mine you can see it came pretty close to the picture in the recipe.

For the marinade I used regular Trader Joe's soy sauce, garlic, hot pepper flakes, and seasoned brewed sushi vinegar instead of mirin. I strained that before adding the eggs. Did this first thing in the morning and they were very nice at dinner time. I have a few left that were not served and have been marinating since yesterday morning.

These look great. I keep Momofuko eggs in my fridge all the time. They last for

a week or more. Love them and thanks for the tip about the 5 minute soak. I have yet, to have a perfect batch of peeled eggs without at least one coming out a mess.'

 
good to know about keeping for a week

I have a couple left today and was wondering. On the positive side these seem to encourage me to eat more salad. They seem to go really well. I enjoyed them most just putting a little fresh red bell pepper on top.
