Speaking of cauliflower- here is something wonderful for you low-carb fans

When I was on my quest to lose lots of weight I relied a lot on a wonderful recipe I found in the South Beach Diet book- I still make it and did last night but now I use a bit of regular half and half and I do put a little butter in it. I don't have the original recipe but will give you the method. It is WONDERFUL. Will take a craving for mashed potatoes away. Last night I served it with sauteed Calamari steaks and roasted asparagus.

Take a head of cauliflower, cut up and either steam or cook in boiling water. Overcook it some because you will mash it.

Mash it. I add chopped onion, some half and half and about a T of butter, a little salt, pepper and a little parmesan cheese. Delicious.

...pancakes this morning. They were good! You know, if you use enough maple syrup you can pretty much down ANYTHING.

Just kidding.

I'm going to tweak the recipe a bit, but almond meal pancakes are good.

This is what someone told me that way back, Weight Watchers used to use for potatoes . . .

Use a food processor to mash the cauliflower

Unlike with a potato where this would be disasterous, the processor really smooths out the cauliflower.
