speaking of curd (i.e. #8415)... has anyone ever done pomegranate curd?

My sis and I tried it one year as it was Christmas and we thought it would look beautiful to have this gorgeous red curd for the scones. Well.... as some of you can already envision, it was exactly the color of chicken gravy. I assume the red pomegranate juice and the yellow egg yolks just didn't work. Has anyone tried something like this? Is there a trick?

It tasted marvelous, so half a bottle of red food coloring later, it was passable enough to use smileys/frown.gif-
