Spicy Polish Sausage w/Peaches & Tomatillo Salsa

This is semi-homemade. I only have stove burners right now at my lake house, and had these things to use up. It was delicious!!! I'm trying to think of what to serve with it. It's so good I'm making it again tonight for the Cherokee.

1 Package hot (spicy) polish sausage

2 15/16 oz cans peaches (I know I know, but it's good!)

Juice of 1 can of peaches

1/4 to 1/2 cup brown sugar

1 T tomato paste

1/2 cup tomatillo salsa (6-8 tomatillos, cilantro, tomatoes, onions, chiles, {jalepeno, green chiles, etc} lime.

Cut each sausage link in half, then slice lengthwise thinly then fry until browned on both sides. Slice them in 1 inch lengths. Stir in the rest of the ingredients. Heat over medium heat, when it comes to a boil stir frequently until sauce has reduced to your taste.

 
Too funny - I made a pork tenderloin last night with almost the same ingredients

15 oz can of peaches with juice
1/2 cup brown sugar
1/2 cup ketchup (I used chili sauce for fun)
1/4 cup apple cider vinegar
1 teaspoon chili powder (I used a dash)
Salt & pepper to taste
Garlic to taste
Dash of crushed red pepper flakes (to taste - I like it sweet and hot)

Cook until hot and bubbly and pour over browned pork tenderloin and bake until done. (Either a short period to about 135 degrees or a LONG time to make it tender)

The sauce was good - I think it would work well for other things like chicken too. Thought I am not sure it needs quite that much brown sugar.

 
My dad used to love polish sausage rolled in a piece of white bread with

strawberry jam. Actually, it is quite good! Maybe try yours with dinner rolls or in wraps like pigs in blankets. Or, my favorite, over white rice. YUMMM

 
I didn't have spicy last night...it made a big difference

The spicy in the sausage really makes it. I had that in TX the night before, so when I got to Okie the Cherokee wanted it. I even went to the Mexican store and couldn't find spicy polish. Can't remember where I bought it now. So I added more peppers, it was pretty simular.

 
Pork and Boones Farm wine...I wish I could remember

10 years ago my ex and I made a ham with cherries, and cherry Boone's Farm wine, it was awesome. Last week I had a pork roast, and did it with Boone's Fuzzy Navel (apple and orange) I even injected the roast, didn't do a thing. I posted that but didn't post bad results.
