and it sounded like it would be a good side dish for Passover. I think with a salad it could be used for lunch also.
SPINACH KUGEL
2 lbs. frozen chopped spinach
thawed and drained.
3/4 cup margerine(Smart Balance would be a good choice)
2 cups onions, chopped
1 cup celery, chopped
1 cup mushrooms, sliced
3 cups carrots, shredded
1 1/2 cups matzo meal
6 eggs. beaten
1 tsp. salt (I will use much less)
1/2 tsp. pepper
olive oil (cooking spray)
1. Preheat oven to 350º Spray 9x13" pan with olive oil spray.
2. Saute onions, celery, and mushrooms in margerine for 10 minutes. Stir often. Place mixture into a large mixing bowl.
3. Add the carrots, matzo meal, spinach, salt and pepper and eggs to cooled vegetables. Mix well.
4. Pour mixture into prepared 9x13" casserole dish.
5. Bake for 40-45 minutes until firm.
NOTE: For those who do not use Matzo Meal, I think plain bread crumbs could be substituted.
I recommend the Smart Balance, as it has no trans fats. They also have a light version, if one prefers.
