Squash Blossoms!!!

So, I have a TON of zucchini blossoms in our garden and I thought the boys would think it was fun to eat them. Does anyone have any good recipes for squash blossom recipes that don't include deep frying? I really don't want to do that with my boys around. Perhaps something that uses pasta?

You can pan fry them if you don't like deep frying. Put a little mozzarella or fontina inside, with

or without an anchovy, use a light batter like a tempura (about 3/4 c flour to 1 cup water, plus a pinch of salt).

Or you can make a frittata with them. You can leave the flowers whole, or cut the bottom away from the petals and roughly chop the bottoms.

I've also had them as a side dish, sauteed with garlic, mixed herbs, and anchovies.

Remember to take out the bitter pistils. Some people say you can only cook with the male flower which is on a stem, not the female which has the beginning of a zucchini attached, but personally I've never noticed a difference.
