Squash Delight from Raw Foods. I have not tried this but plan to soon.

2 cups acorn or butternut squash, shredded

1/2 c finely chopped red pepper

2 tbsp lemon juice

1 tbsp tamari or soy sauce

2 tsp honey or maple sprinkles or stevia

1 tbsp grated ginger root

pinch Chinese 5 spice powder

In a bowl combine the squash and red pepper, toss. In a small bowl mix the lemon juice, tamari, honey, ginger and 5 spice powder.

Pour the dressing on the squash and toss. Allow the flavors to blend for 30 mins. Serves 2-3
