Hubby's department requested Three Many Cook's Corned Beef and Cabbage Slaw Sliders for the second year in a row. Awesome sandwiches!

I served them with root chips and Chocolate Stout Cake

Getting ready for tomorrow (we have 20 coming for St Patrick's Day dinner) I prepared the Guinness and Dubliner Dip

Sauteed the leeks and baked the potatoes for the stuffed potato appies, they'll go together tomorrow.

Veggies are all chopped and ready to cook the corned beef tomorrow, but for now it is 'desalting' in the fridge. Not very pretty...but it smells FABULOUS http://breadzone.net/desalting.jpg

My weekend six

- Friday night was grilled sesame seed-encrusted teriyaki chicken with brown rice and asparagus. Can post the recipe if anyone is interested.

- Reuben meatloaf (RR's corned beef meatloaf with a topping of Swiss cheese, sauerkraut, and 1000-Island dressing) on Saturday night, with the rest of the beer that I didn't use in the recipe ;o), and all the NE boiled dinner sides. Good!

- Did some some research for upcoming HS reunion... too nce to be inside, so it didn't last long.

- Watched the SU bball game yesterday. Was holding my breath for the whole first half, was able to enjoy the second half. Hummus and vegetables made for a nice lunch while watching.

- Breakfast this a.m. was a egg casserole I saw somewhere or other. Good when having guests (had my husband's out-of-town nephew for the weekend).

- 75 degrees in Syracuse in March?!! We took the dog for a nice long walk at the lake park again this weekend. So good to be able to do this with just a t-shirt. This is the third year in a row that we've gone from winter to summer without spring. I like spring :eek:(

DH made salmon patties Friday night with my cilantro coleslaw and sweet potato fries. what a nice dinner! last minute drop in friends ate up the salmon patties, so no lunch for me today smileys/frown.gif

DH bought corned beef and cabbage, so that was dinner on Saturday instead of the marinated steak posted up above. it was good, but I still need to try that beer marinated steak. I cut the veggies too small for DH's liking. still learning. a quick herb beer bread added just the right side.

Strawberry shortcake with this easy 1 layer cake---uses self rising flour---http://tastykitchen.com/recipes/desserts/quicky-cake/ very easy and good. I used Splenda and it worked well.

Taxes almost done! first year for us as joint. We should have celebrated but DH took some overtime hours instead. next weekend we'll celebrate when we actually file.

Made Split pea soup on Sunday using 2 cups of the corned beef broth and a few bits of leftover beef. It is so very yummy! I blend it with an immersion blender a bit, not quite smooth, then I add a can of LeSeur Peas for a nice fresh pop in the mouth. It's quite lovely.

Pot luck Monday at my quilt group, so it's German potato salad and sliced smoked sausage in a casserole, all ready and just needing a zap in the microwave tonight.

bonus seven: our mountains of snow are starting to melt---oh my, what a mess we will have for weeks and weeks. must stock up on wiper fluid.

Okay, here it is: Rec: Sesame Seed-Encrusted Chicken Breasts

1 1/2 lbs boneless, skinless chicken breasts
black pepper to taste
2 t light sesame oil
1 t canola oil
2 t sodium soy sauce (I used low-sodium soy sauce)
6 T sesame seeds
4 T bread crumbs (called for panko, but I used unflavored regular)

3 T teriyaki sauce
1 T light sesame seed oil

Preheat oven to 400°F. Combine black pepper, 2 t sesame oil, and 1 t canola oils with soy sauce in a bowl; in a separate bowl, combine sesame seeds, salt, pepper, and bread crumbs.

Pound chicken thin and dip into soy sauce mixture. Remove, shake off excess, and pat sesame seed mixture onto the surface. Repeat until all chicken has been coated and then discard remaining mixtures.

Place on a non-stick baking sheet and bake for 15-20 minutes. Turn over and cook another 15 minutes or or until cooked through. Remove the chicken from the oven when the internal temperature is at 160 degrees. Times will vary based on how thin you've pounded the breast.

Whisk together teriyaki sauce and remaining sesame seed oil and sprinkle over chicken.

 
I had this at a restaurant somewhere and thought it was such a nice touch. DH wishes he had taken

the whole container to work instead of splitting it in half---he said it tasted like "more".
