Starburst - Tried the Blue Cheese/Bacon/Garlic Dip you posted - YUM!

Glad you liked it, I still haven't gotten around to trying it it yet

What kind of blue cheese did you use? and what did you serve it with? I'll have to remember to make this at my next get together.

 
I know this sounds like a joke, but how do you know when/if blue cheese that has been opened...

has gone bad? I have several packages that I bought and am not sure if they are still good. Some of them have not been refrigerated but have been kpet in the cool, dark cellar for about a month.

One was awful when I bought it - Rosenborg. It had little sharp, bitter white chunks in it. Was this even good when it was "fresh"?

I had a box of leftover Club crackers from a get-together 2 weeks ago. I wanted to do toasted baguette slices but w/ 3 little ones that's all I had time for after making a Salmon dip and brownies too.

Can't remember the brand of blue cheese. It was a different brand (already crumbled) in the gourmet section on sale that was different than the usual stuff I get in the cheese aisle.

I might try Pepper bacon next time too. -Tessie

 
I've had it go bad on me and it definitely smelled differently...

If you like blue cheese and know the usual smell of it then you should be able to tell. I knew when it smelled really icky. I didn't even need to taste it.

Don't know about the weird white bits. My blue cheese is the standard stuff, nothing fancy. -T

 
It needs to be refrigerated for sure.When it has a hint of ammonia

and is very very sharp, it is done.

 
Once I had a package developed a different colored mold. It was

kinda pink. I didn't even bother to smell the cheese--just tossed it.
