Starting to feel a tad better so I'm cooking dinner tonight! Got a Mangalitsa pork loin

roast marinating in garlic paste with rosemary and thyme, paprika and lime zest (we're out of lemons!). It will be roasted on a bed of slabbed shallots and butternut squash. Made a mixed herb salad with shaved fennel and tiny blanched asparagus and Princess Diana's chive cream dressing. My friend Deb has been making me amazing meals since I've been staying with her and this is a relatively effort-free dinner. Except for being unable to bend over, makes me cough, and having to work while perched on a stool, it's gone pretty well! Going to try having a glass of wine until it's time to sear the roast in plenty of melted butter. Yum! Where in the world did you find the Mangalitsa Pork......

I did not think it was available yet, except to chefs.

 
Everything came out great! Leftovers today went into the best sandwich I've had in forever

Got the Mangalitsa from a chef friend who wanted to buy a pig and butcher it himself for home, we went in on shares of it. Next time I will buy more and I want to help butcher, I have dabbled on seam butchery and sausage making. The bacon was incredible.

Been too tired to do much, all breathless and tired, but the coughing fits are lessening during the day. Tomorrow I'm making Gigantes Plaki again, a nice low prep dish.
