I betcha the thickener in it is something like ClearJell or ClearJell 2 or a modified food starch. I had never heard of King Arthur's enhancer before.

Do you have to add any additional sugar when you use the Pie Enhancer?

You can buy pure ClearJell and then you can control the amount of sugar you put in the pie and for that matter you can buy pure ascorbic acid crystals and control the tartness/browning of your fruit too. Probably cheaper, and you would most likely pay more up front but get a lot more pies out for the same amount of money.

I'm just too durned lazy to go out and find ascorbic acid crystals, Clear Jell and then do the math for proper proportioning.

I've been using the KA enhancer for about 10 years. I get 8-10 pies out of each little package, they deliver it to my door and it keeps virtually forever. I decrease the sugar in a recipe by 1/4 cup and never had one turn out too sweet. What more could a boy want?
