what I had on hand: peaches, sugar, egg whites waiting to be used, pastry cream that was left over from tarts. Baked, of course.

What a simple but elegant dessert. It all worked perfectly and used up what needed to be.

Sometimes I like to be forced to be creative at the last minute, even tired, after a day of exploring this beautiful countryside.
