I made this today, it is delicious! If you use agave nectar rather than maple syrup; or mix stevia in your maple syrup, a diabetic can enjoy this ice cream.

I just threw it all in the food processor and mixed it up. So easy....I didn't have Greek yogurt, just used what I had. Enjoy!

Simple Strawberry Cream Freeze

Inspired by Simple Food for the Good Life, by Helen Nearing (Chelsea Green, 1999).

This luscious recipe inspired by simple-living expert Helen Nearing takes strawberries to new levels of pleasure: you don't need an ice-cream maker to concoct this tangy-sweet and creamy frozen strawberry dessert.

SIMPLE SOLUTION:

INGREDIENTS

1 quart strawberries (you could also substitute blueberries or raspberries)

1/2 cup maple syrup

2 cups plain Greek-style yogurt

1 cup organic sour cream

1. Mash berries and combine with maple syrup. Fold in the yogurt and sour cream.

2. Place mixture in a shallow pan and put in freezer. Stir every half-hour for 2 hours, then serve.

Serves 6 to 8.

I don't use Splenda, so I'm not familiar with their syrup. Agave Nectar is thinner slightly than

maple syrup; if I were to use it I might have to use less because it might make the dessert too runny.

Agave nectar is in health food stores; it's a sugar replacement for diabetics...it doesn't cause a glucose rush. I really should have tried it before the maple syrup....maybe next time....
