Tis the season here and they are beautiful and delicious. I make all kinds of jam and jelly all through the seasons. This is mine for preserves.
Finely dice enough strawberries to measure 1 quart
Add 2C sugar, mix well and let macerate for 8-24 hours.
Bring to a boil and simmer 5 minutes.
Drain strawberry pieces through a strainer or collander.
Heat the drained syrup to concentrate it to what looks like approximately the same volume of drained berries.
Add berries back and heat over medium heat, cooking until the consistency of the preserves is thickened well to jell stage.
This will make 3 half pints of finished preserves.
It is delicious!!!!
