I have a bunch of tomatoes that I salvaged when I ripped up the garden, they are now ripe.

Can I freeze them? I want to use them for salsa but I don't want to make the salsa just yet. I promised Cici that I would make some for her to take to work next week. I have a food saver so do you think I can freeze them in the food saver bags without them getting too watery? Should I dice them 1st or freeze them whole? Or should I not freeze them at all?

If it were me....

I'd slip the skins off, puree or chop them, then freeze. They'd be ready for salsa when you're ready. You could even simmer them with onion and garlic if you wanted then freeze.

There are several ways to do it. You'll enjoy that salsa this winter! YUM!

 
OH, you said next week?

If they just now turned red they should still be fine by next week and you could make the salsa fresh.

 
Well I have about 60 of them, so that would make a huge pile of salsa>>>

Since I only use about 6 to 8 of them per batch. Plus they are a little on the over ripe side right now, so I think I will take your advice and skin, chop and freeze into food save bags. As you pointed out, I can then have fresh salsa for the winter.
